Seasonal author's cuisine · Cape Town

Do you want to know who is cooking your next dinner?

At Keldaro the cooking shows in the concrete decisions: the ingredients that are actually good this week, preparations made with care, and dishes served at their peak rather than held under a lamp. There is no fixed year-round menu — the kitchen builds a short list around what the season and the morning market offer, and changes it when the produce changes. These pages explain how we work, the three ways to eat with us, and what is useful to know before you come.

01 — Kitchen

Cooking you can see in the decisions

Keldaro is an author's-cuisine kitchen: the chef develops the dishes rather than reproducing a catalogue. That means the menu follows the produce instead of the other way round. When the market has something at its best, it goes on the list; when it is gone, so is the dish. The result is a shorter menu than most, and a more honest one.

Service is built around timing. A dish is cooked to be eaten now, which is why some preparations take a little longer and why we would rather tell you the wait than rush the plate. Good cooking, in our view, is mostly a sequence of small, careful choices made at the right moment.

03 — Dine in

Dining in

The dining room is small and calm, in warm terracotta and cream, built so the kitchen is part of the room rather than hidden behind it. Booking ahead is wise, especially at the end of the week; a table held is a table cooked for. When you reserve, it helps to tell us the number in your party and any dietary needs, so the kitchen can plan the evening properly.

04 — Takeaway

Takeaway

A selection of the menu travels well and is available to take away. Because dishes are cooked to order, takeaway works best when you call ahead: we will tell you what is on today and roughly how long it will take, so the food is ready at its best rather than waiting. Some of the more delicate plates stay in the dining room, where they are meant to be eaten; we will always say which.

05 — Private

Private gatherings

For a birthday, a small celebration or a working dinner, the room can be arranged for private groups. A set seasonal menu is agreed in advance around the group's size, timing and any dietary needs, which lets the kitchen cook a single, well-paced sequence for everyone. Get in touch with the date, the number of guests and anything we should know, and we will put a proposal together.

06 — Before your visit

A few things worth knowing before you come

A little information ahead of time lets us cook for you properly. Before your visit, it helps to:

  • confirm the service times for the day you plan to come;
  • ask what dishes are on — the list changes often;
  • mention the size of your group when you book;
  • tell us about allergies or dietary needs in advance;
  • ask about preparation times for anything cooked to order.

None of it is required, but each makes the evening run more smoothly.
